The sole purpose of sharing is to learn more. Frankly i learnt cooking in the new school of thought Thanks to my mentors Chef Hemant Oberoi, Chef Sanjay Malkani, Chef Satish Aurora these stalwarts gave us all they had never kept anything behind..
I had always felt that the recipes are secret codes never to be announced. Had heard stories of Ustads and Maharajas carrying a small packet of secret potion or formula whichtheyvwould quickly and quietly add to the prepared dish by a commis., on occassions disruptthewhole process by creating hurdles or running out certain stock items so that they can then be the saviour by adding the contents of their packet and Lo! I don’t need you. Sometimes would tell their apprentices to keep all the mis-en ready and then telling them go have asmoke so that they would prepare the dish by the time this motivated cook would appear only to serve it.
Some kitchens still guard their secret recipes to this ordeal and they may have their clarification to it….i agree it is important. But then this people are not generating a lifetime of an opportunity, not promoting the work culture, developing new chefs, cuisines they are simply being unsecured.
when you share with people your knowledge u invariably learn more and gain wealth, fortune of more knowledge and the more you spread it around people the more you create an atmosphere of living in harmony.
Cooking is not only sweating it out in hot greasly kitchens but planning, organising, creating, developing and serving it graciously only to see the expression of intense satisfaction one can get after savouring it.
A Chef would never prepare his food as a job routine; he almost romances the markets, flirt with vendors to get him the best supplies, comes to the kitchen with excitement ,whips out his skills and presents his art d’oeurve to his patrons
